Pineapple Meatloaf is real good and real easy.

This Pineapple Meatloaf recipe is for our friend Mai.

This is Gammy’s (that’s what our grandkids have named her) family recipe for Pineapple Meatloaf. When we lived in Mexico, in a real nice little town called Chapala, Gammy and I were members of the local American Legion chapter and they had varied cooking contests. Chili cookoffs, etc. Well there came along a Meatloaf Contest and Judy Kelly, aka Gammy, won it with her grandma’s Pineapple Meatloaf and here is the recipe for you.

Pre heat the oven to 350°F/176°C. In a mixing bowl big enough to handle all of the ingredients, plus some room for mixing, whisk the egg. Add the oats, onion, bell pepper, and salt. Mix  it all together.

Then add the beef and the pineapple and thoroughly mix everything together. Spray oil a 9″x 5″ loaf pan, add the mixture and pat it down.

Pineapple Meatloaf2 poppopcooks.com

Bake for 35 to 40 minutes. It should be 155-160°F/71°C on a meat thermometer. Slice it up and top with the gravy or sauce of your choice. We went with our our Marinara Sauce tonight, but, you can use any topping you want. Gammy says that her grandma would use BBQ sauce or sometimes a can of Cambells’s cream of mushroom soup, not diluted, just right out of the can and heated up.

Enjoy your Pineapple Meatloaf!

Spicy Cilantro Lime Chicken

Spicy Cilantro Lime Chicken5 poppopcooks.com

Spicy Cilantro Lime Chicken – You have probably heard of Parsley Lemon Chicken. It is an old Italian recipe that is just that, sautéed chicken with parley and lemon and that’s it. As simple as it sounds it is still real good. You will find that substituting cilantro and limes for the parsley and lemons will give a new flavor to that old standby. Then if you add in the jalapeños you will have a spiced up version. You will like it for a quick and easy weeknight supper.

Put a skillet on at medium high and add about a tablespoon of olive oil. Salt, pepper and garlic powder both sides of the chicken and cook until the liquid running out is clear and/or they are firm to a poke with your finger. Remove them to a plate and turn the heat down to medium low.

Spicy Cilantro Lime Chicken1

While the chicken is cooking chop up the cilantro and the jalapeño. Rinse off a lime and cut it in half.

Spicy Cilantro Lime Chicken4 poppopcooks.com

Add the juice from the lime and the chopped jalapeño to the pan and cook just for about a minute until the jalapeño starts to soften. Add the cilantro and cook just until it wilts a little. Spoon the sauce onto the chicken and serve it up!

Some chilled Pinot Grigio or Sauvignon Blanc would go along real good with your Spicy Cilantro Lime Chicken. Bon Appetito!

Garlic Shrimp with Seared Lemon Slices 15 minutes

Garlic Shrimp with Seared Lemon Slices poppopcooks.com

You like Garlic Shrimp and when you add lemon you like Garlic Shrimp even more, right? You will like it even more when you turn it into Garlic Shrimp with Seared Lemon Slices. It doesn’t add any time to getting it on the table and it adds another nice layer of flavor.

Peel and devein the shrimp. If they are frozen and you don’t want to wait for them to thaw out in a bowl of water you can defrost them in the microwave. I’ve done it lots of times and it works out just fine. The shrimp will thaw real quick in the microwave and will be peelable in just a minute or so.

Put a skillet on at just little hotter than medium and add one tablespoon of extra virgin olive oil. Slice up the lemon and add the slices to the skillet all laying flat. Sprinkle with a little salt and black pepper.

When they are seared turn them over and sear the other side. While all  this is happening chop up the garlic. When the lemon slices are seared on both sides add the garlic.

Garlic Shrimp with Seared Lemon Slices2 poppopcooks.com

Immediately put a tablespoon of butter on the garlic. I was enjoying my first glass of Chianti (are you surprised?) so I added a little to the pan.

Garlic Shrimp with Seared Lemon Slices3 poppopcooks.com

Bring it to a simmer and add the shrimp laying them out on their sides. When they get pink turn them over and cook the other sides. The wine will reduce a little as the shrimp cook and you will be ready to serve up your Garlic Shrimp with Seared Lemon Slices.

Stovetop Grilled Shrimp with World Class Veggies

Stovetop Grilled Shrimp poppopcooks.com

You want it to be real good but you want it to be easy and on the table in a flash. This Stovetop Grilled Shrimp will fill the bill for you on all counts.

If your shrimp are frozen just put them in a bowl with enough water to cover them up for about ten minutes while you prep the vegetables, then peel and devein them.. Rinse and wipe out the bowl and put the peeled and deveined shrimp back in. Drizzle them with a little olive oil, lightly sprinkle with salt, black pepper, red pepper flakes and garlic powder. Squeeze in  the juice from a quarter of a lemon. Toss in the lemon rind and stir it all up. Put it aside to marinate a little as you do the veggies.

Put the oven on at 400°F. Scrub and rinse the sweet potatoes then slice them in to about 3/8″ slices. Put the slices in a bowl and drizzle them with olive oil and lightly sprinkle some salt and pepper on them. Toss the slices so they get coated with the oil, salt and pepper. Spread them out on a large cookie sheet and put them in the oven. After about five minutes either turn them over or switch the oven to broiler mode and give them another 3-4 minutes. Poke them with a fork to see when they are done. I wanted them to look grilled,,so,,I grilled them and then put them in a bowl covered with a plate and on an idle burner on the stove to stay warm.

While the potatoes are cooking cut up the veggies. Trim the stub ends off the asparagus and cut the asparagus spears  into any sized pieces you want, but, you already knew that didn’t you. Cut the onion into thin strips and chop the garlic.

Put a large skillet on at medium high and add one tablespoon of olive oil. Put the asparagus in the pan and toss a few times as they cook.

When they are just starting to get a little limp push the asparagus out to the sides of the pan and put the onion in the bare spot. Stir the onion a few times as it cooks.

When the onion just starts to get translucent push it to the outside also and put the garlic in the middle. Squeeze the juice from a quarter of a lemon on to the garlic. Lightly sprinkle salt and black pepper. Toss it all together and toss it few more times as it all cooks and comes together. That’s an old Beatles song right?

Okay, so the Veggies are almost done. Now the Stovetop Grilled Shrimp part. If you don’t already have a stovetop grill or a skillet on a burner put it on now. Crank the heat up to medium high and spray oil it. As soon as it is hot spread the shrimp out and pour the liquid from the bowl on top of  them. Stovetop Grilled Shrimp2 poppopcooks.com

Turn them over as soon as they get pink and grill the other side until the middle is opaque white.
