Frittatas with Tomatoes Onions and Fresh Mozzarella are a quick, easy and a great breakfast. You can make Frittatas dozens, no, hundreds of different ways and they are all good. Gammy always has some of her frittatas for people on the go in the freezer, but, on a weekend when we are going to be home for breakfast together we try different ways to enjoy our frittatas. This is one of our favorites.

Frittatas with Tomatoes Onions and Fresh Mozzarella

It’s an easy and very good Italian variation of an egg omelet.
Ingredients
  • 4 eggs, beaten
  • 1/2 medium size onion,, cut in strips.
  • 1 Roma tomato seeded and cut into strips
  • 4 slices of fresh mozzarella about 1/8″ thick or any kind of cheese YOU prefer
Instructions
  1. Beat up the eggs
  2. Cut up the onions, tomatoes and the cheese
  3. Put an oven safe skillet on at medium
  4. Light up the broiler
  5. Put the butter in the skillet
  6. When the butter has melted spread it all around the pan and add the onions stirring or tossing as they cook.
  7. When the onions start to turn brown add the strips of tomato.
  8. Stir them in with the onions and cook them for just about 20 seconds.
  9. Add the eggs and cook until it gets firm enough on the outside edge to be able to be slightly pulled away from the side of the pan with a fork.

  12. Spread the slices of cheese out on top of the Frittata and put the pan under the broiler until the eggs have firmed up and the cheese has melted.

Cheater Cannoli

I’ll bet that you love cannoli. I’ll also bet that you have never made them. I agree. Who wants to fry those tubes in deep hot oil? I thought this was my brilliant idea until I read up on cannoli and found out that starting in the 1930’s people that were as lazy as me had started making them with pizzelles.

First you are going to need a pizzelle iron.  You can find them at Bed Bath and Beyond or Kohlers or click on the link for amazon. We have always had one. Sometimes the grandkids help me make a batch of pizzelles and they take home a bag of them, covered in powdered sugar. Plug in the iron and set it at about 3/4 of the way from lowest to highest. Wipe off the cooking surfaces and spray them with oil. spray again for each batch. Melt the butter in the microwave or on the stove. Mix the flour and the baking powder in a bowl and set aside. Put the eggs and the sugar in another bowl and whisk together or do it with a hand held mixer for 2-3 minutes until it thickens up. Slowly add the butter and the vanilla mixing as you go. Add the flour mixture to the egg mixture and mix it all together. You can over mix this so just get it smooth. Add a dollop of the dough to each hot spot. You will make some too big and some too small until you get the size right for your pizzelles. The pizzelle iron that  these links take you to has a light that tells you when the pizzelles are done.

When they are done lift them out with a fork and right away wrap them around Cannoli tubes set them on a mopeen, er, towel with the seam side down and a weight on the top like the cooks fork and the honing steel you see in the pic.

It just takes a couple of minutes to cool off and keep their shape as you are cooking up the next pair.

When you are done making your tubes. You make the filling. It’s super easy. Just mix the powdered sugar and the ricotta cheese together. Add some extras if you want. The most common is chocolate chips then comes ground up pistachios. You can add just about anything. We’ve seen them with cherries, raisons, chopped up walnuts and on and on. Or, you could just use the filling with nothing else added.

Frittatas for People on the Go

I can't eat just one.

Gammy makes these and they are great! When your running a little late in the morning but your real tired of “energy” bars this is great. You know what, it’s great even when you’re not in a rush.

 

Ready for the pans
All the Frittata ingredients

Heat oven to 350F. Mist 2 muffin pans (12 cups each) with cooking spray. Cook the bacon until it is as crispy as you want it. Break it up into about 1/2 inch pieces and set aside. In a large skillet at medium high heat add the oil and let it heat up. Add the onions, peppers, mushrooms and asparagus. Stir them together and cook until they are soft, about 5 minutes. In a large bowl whisk the eggs, milk and basil until it is all mixed up real good. Stir in the the bacon, cheese and all the rest of the veggies.

Spoon the mixture into the muffin cups filling them about 3/4 full. Bake for 20 minutes or until they are firm. Not like a rock and not like mushy. Just firm.

I can't eat just one.

Of course you are going to have to have one or two as soon as they’ve cooled off enough to handle. If there are any left put them in a zippy bag and in the freezer. Then when you are in your morning mode and in a rush to get going put 1 or 2 in the microwave for 30-45 seconds and nosh on it as you leave to face your day.
