Shrimp Scampi will be at the top of your list of “go to” choices when you want to keep it simple but still would like it to be real good and…..

……for a great game day finger food just forego the pasta and serve your Shrimp Scampi with toothpicks!

Shrimp Scampi is a basic simple Italian dish of just a few ingredients that you will not mess up.

In fact any fancy Italian restaurant has to keep it simple to have it turn out well and they cannot make it any better than you are going to.

Put a pot of salted water on for the pasta and if the shrimp have to thaw out put them in a bowl of water.

While the coming to a boil and the thawing out are going on lets put together a salad for tonight’s veggie and chop up the garlic. Caprese Salad would be our choice for our Italian mood dinner.

The salad is ready, the shrimp have thawed out and the pasta water is boiling.

Put the pasta in the pot of water and stir it right away to keep it from sticking together. Remember to stir it a few times as it cooks.

Put on a skillet that is large enough to handle all the shrimp laid out flat. Set the burner at medium and add the olive oil and 1/2 of the butter. When the butter has melted put in the garlic.

 

As soon as you get the fragrance of the garlic cooking add the salt, pepper, parsley and red pepper flakes.

Stir it all together and lay the shrimp out in the skillet. Give the shrimp just half a minute to a minute a side depending on their size.

Then put in the rest of the butter, squeeze in the lemon juice and add the white wine. Oh, and a splash of the pasta water

Stir it all together and just a minute or so after it comes up to a simmer…….

String Beans can be blah. Especially canned or frozen ones. We like fresh and sometimes even buy them already washed and trimmed. Team them up with some onion, garlic, sliced almonds and lemon juice and – WOW – you will have quite the opposite of blah. This String Beans and Sliced Almonds recipe is real easy and real good.

Put a skillet on at medium high and add a couple of tablespoons of good extra virgin olive oil. If your string beans are the bulk kind rinse them off and cut off the fuzzy end. If you want them to be more like bite size cut them into the size that you want. Slice or chop the garlic and the onion.

You can easily prepare Baked Parmesan Crusted Asparagus for game watching finger food or enjoy it as a great veggie with your favorite meat and potatoes like we did here tonight with our beef tenderloin and microwaved “baked” potatoes.

Set the oven at 450°F. Cut the stump ends off the asparagus and cut the stalks in half.

Put the asparagus in a bowl and drizzle with extra virgin olive oil. Sprinkle with salt, pepper and garlic powder. Then a generous grated parmesan treatment. Toss it all together.

You will have to use two skillets to put together this Quick Easy Spicy Pork Chops meal. Poor baby.

Take the pork chops out of the fridge and let them get rid of the chill while you start on your potatoes and veggies.

Put the first skillet on at medium high and eyeball about three tablespoons of olive oil. Cut the potatoes in half lengthwise then slice into about 1/4″ slices. Put them in the pan and salt and pepper them. Toss them a few times as they cook.

While the potatoes are at it chop up 1/2 of a large onion. When the potatoes have started to get crispy put in the onions and mix it all together.

Put the second skillet on at medium high and eyeball just enough olive oil to coat the bottom of the skillet. Trim the excess fat off the chops. Salt and pepper them. Now, beyond the salt and pepper is when you can let your creative juices flow and spice things up to suit yourself. After all, you are the boss. Tonight I went with red pepper flakes, ginger, garlic powder and dried basil. But you do it how YOU want.

Toss the onions and potatoes occasionally. Cook the chops about 3 minutes a side depending on the thickness.

When you turn over the chops to cook the second side add the peas to the potato skillet and toss. Toss the veggies together a couple of times as the chops finish cooking. When the chops are firm to a poke or reach 160-170°F on an instant read meat thermometer they are done. When the peas are hot to the touch they are done.
