Yes, you will have this Shrimp and Broccoli Stir Fry with Rice ready to serve in fifteen minutes. Maybe even just ten!

YOU will do it better and faster than take out or delivered!

The quality and size of the shrimp makes a difference so I gut up and pay for wild caught that is very large or jumbo size. But, you don’t have to.

Let’s go!

If your shrimp are frozen just put them a bowl of water and they will be ready to be peeled and deveined in a few minutes. Or, you could thaw them out in the microwave in just about a minute. Or you could buy them already thawed out at the seafood counter in your grocery store.

Put a pot of water on for the rice or if you have some leftover in the freezer microwave it to get it ready to serve. I’m using some instant rice tonight that will take 8-10 minutes, tops. You can also do the instant rice in the microwave in a little less time than on the stove.

Chop the garlic or just use that pre chopped that you can find in jars in the produce section.

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom.

Add the broccoli and half of the garlic to the skillet. Lightly sprinkle with salt and pepper. Toss it a few times as it cooks.

Put the rest of the garlic in a bowl and add the honey and soy sauce. Whisk it all together and add the shrimp. Gently stir the shrimp into the liquid to get it all coated.

When the broccoli is almost as soft as you like it push it off to the sides of the skillet and pour in the shrimp and just enough of the marinade to coat the bottom of the skillet around the shrimp.

When the shrimp have turned pink on the bottom turn them over and get them pink on the other side. Then toss it all together and serve it up with the rice and some soy sauce for topping everything off.

Easy Blackened Salmon Dinner – 20 Minutes – Gluten Free – Paleo

This Easy Blackened Salmon Dinner is…

…….. also very very good. 

Skinless salmon filets work best for this recipe. If you buy the salmon fresh the person helping you will skin them if you ask. If you buy them frozen look for some that have already been skinned.

You could use a lot of different combos of ingredients in the dry “rub” to get a lot of different flavors. Tonight I went with salt, dried basil, cayenne pepper, dried dill weed, lemon pepper and garlic powder. You could mix them all together in a small bowl or just sprinkle them on the filets right out of their containers.

The veggies are going to take a little more time than the salmon so let’s get them going.

Gammy likes pan fried potatoes with onion and fresh rosemary so,,,,,,,,yup, I do it for her pretty regularly. You can cook another veggie right along with the potato and onion if you want. I went with zucchini tonight.

Put a skillet on at medium high with enough olive oil to coat the bottom. Slice up the veggies and put them into the skillet with the rosemary. Sprinkle with a little salt and pepper.

Toss a couple of times to get everything coated evenly.

While the veggies are cooking put a smaller skillet on at medium high and swirl in some olive oil. Top off the salon filets with half of the “rub” on the side without the gray stripe.

Put them in the skillet with the spicy side down and the gray striped side up.

Then spice up the stripe side and cook for 2-3 minutes a side depending on how thick they are and how well done YOU like them. 

Toss the veggies a few more times as the salmon cooks. When the veggies and the salmon are done……..

Barcelona Mussels Recipe – It was 1959 and I was in the Coast Guard on a ship headed from Brooklyn to Naples. After 7 days at sea we had gone through the Straits of Gibraltar and docked in Barcelona, Spain.

Some of us were given liberty and didn’t have to report back until muster the following morning. I had made friends with a few of the crew that were my age and rank so we teamed up and hit the streets.

The first thing that we did was to find an exchange and got Spanish money to fund our adventures. I held out a ten dollar bill to the guy at the counter and he looked at me like I was nuts. I indicated “yeah” and was given more Spanish cash than I had pockets for. I wound up stashing some in my socks and even in my underwear. I still had some leftover even after all of our shenanigans.

One of the guys was portuguese from Newark and another was puerto rican from Manhattan. They were our interpreters,, kinda.

We did everything that young sailors would be expected to do, and more, after a week at sea. But, back to the Barcelona mussels recipe.

We went to this local restaurant that was just opening up for the evening. As soon as they saw us they got an “oh shit” look on their faces and started pushing some tables together for us.

We sat down and while we were trying to understand the menu the waiter – without asking – poured us all some red wine. Wow, it was good!

Then he came back with our “tapas” aka appetizer. It was this Barcelona Mussels Recipe and, again, wow, IT was good too! They served it in a big bowl with a couple of big spoons. We each were given our own small soup bowls to get our share.

And, a big plate of hot crusty bread for dipping.

I made it the other night and of course it reminded me of my visit to Barcelona and I started recounting it again for Gammy.

She rolled her eyes and said, “Jack, I’ve heard all about that already.”

Anyway, here goes.

About the mussels. We can’t get any good fresh ones here in the Austin area so we just go with these cleaned, cooked and frozen ones that are found in the local grocery store.

Put a skillet that is big enough to handle the mussels on at medium heat. Swirl in enough extra virgin olive oil to cover all of the bottom.

Add the chopped onion and stir to get it spread out and stir it a few more times as it cooks.

When the onion has become translucent – about 5 minutes – add the chopped garlic and cook for just a minute or so. Don’t let the garlic get brown. Then the tomatoes, salt and pepper, red pepper flakes, paprika and red wine (or white wine or chicken broth).

Mix it all together, turn the heat up to medium high and bring it up to a simmer,

When the the liquids have reduced a little put in the mussels. Stir everything together and stir again a few times as the mussels heat up – about 6-8 minutes. If you are using fresh mussels just cook them until they open up and throw away any that don’t open.

In Spain it is almost always served with rice and sometimes with pasta. The Italian in me kicked in and I opted for some pasta with mine and some spinach and tomato salad with feta cheese and a little loaf of Poppop’s easy homemade bread for dipping and some Spanish Tempranillo red wine.

Lemon Mint Salmon – 16 Minutes – Quick and Easy

This Lemon Mint Salmon is our spinoff from the classic Italian chicken filets with lemon and parsley.

But, it’s salmon instead of chicken and it’s mint leaves instead of parsley. Ya got that right?

Nonetheless it’s simple and very good, just like the original, but, in it’s own delicious way.

Salmon is good and good for you so we have it about once a week, for both of those reasons.

Gammy always has a mint plant in a pot out on the deck in the summer and inside on a window sill in the winter. Along with parsley, basil, rosemary, thyme, oregano, sage and on and on. Did I mention that she grew up on a farm?

If you don’t have a mint plant you can get fresh mint leaves in the produce section at your grocery store.

This is a very good, quick and easy way to go for a busy weeknight dinner. And, depending on the side dishes that you serve it with you could have gluten free or paleo.

I’m gonna leave the veggies to you tonight and just focus on the salmon.

Put a skillet on at medium high and swirl in barely enough olive oil to coat the bottom and add the butter.

Pat the salmon filet dry and season the non skin side – or if your filets have been skinned treat the flat side that has a gray stripe on it as the skin side.

First squeeze some lemon juice on the non-skin  side then season with salt, pepper and dried dill weed.

Put them in the skillet skin side up and cook until you see some white juices showing up.
