Pan Seared Tuna Steak with Lime and Cilantro

You will have this Pan Seared Tuna Steak dinner on the table in record time. The  pan seared tuna steak will take one and a half to two and a half minutes a side depending on how rare-  or well done – that YOU want it.

The sautéed spinach is so fast that you have to wait for the tuna to be almost done before you put the spinach in the skillet.

The potatoes take about 5 minutes in the microwave. How is all of that for Quick and Easy?

Lets get started ……

……..If your tuna steaks are frozen you could put them in the fridge in the morning on your way out the door. Or leave them in their individual wrapping and put them in a large bowl with a lot of water. The more water in proportion to the tuna steaks the faster they will defrost.

Or in the microwave on the thawing setting for a couple of minutes.

Put the potatoes in the microwave to “bake” while the rest of your Pan Seared Tuna Steak dinner comes together.

Put a skillet on at low for the spinach with enough extra virgin olive oil to cover the bottom.

Slice or coarsely chop the garlic cloves and add them to the spinach skillet. You are going to let the garlic just get translucent and not get brown. Don’t add the spinach until the tuna steaks are done so if you need to turn off the heat on the garlic to keep it from browning, so be it. You can turn it back on just before you add the spinach.

Put the tuna steaks into a bowl and add the lime zest, lime juice, salt, pepper, dill weed and a splash of white wine. Or, you could just go with salt and pepper and squeeze some lime juice on them just before you dig in. That also works okay.

Gently turn them over a few times to get them well covered with all of that good stuff.

Put a skillet on at medium high and add the olive oil and butter. When the butter has stopped foaming gently slip in the tuna steaks. The oil and butter will start foaming again but that’s okay. Pour some of the lime juice mixture on them.

Assuming that your tuna steaks are 1″ thick cook them for 1 and 1/2 minutes a side for rare. 2 and 1/2 minutes a side for well done. We like 2 minutes a side and medium rare. If in doubt just use a table fork to open a steak up a little and look at the inside to see how done it is.

Put the spinach in its skillet with the garlic and turn it over a few times as it wilts. When it is as wilted as much as YOU want it add it to the plates.

Squeeze a little lime juice on the tuna steak and the spinach.

Now, serve up and enjoy your Pan Seared Tuna Steak with sautéed spinach and “baked” Potato.

Don’t forget the rest of that white wine. Pinot Grigio goes along real good.

Simple Garlic Shrimp – Quick and Easy – 20 Minutes

Talk about Quick and Easy!  This Simple Garlic Shrimp is that and more, like, delicious, crowd pleaser, good for a weeknight after a hectic day and even for a Sunday sit down.

It is one of our favorites.

Along the lines of of our Pan Seared Scallops have the rest of the meal ready before you put the shrimp into the skillet.

Let’s get  the pasta going and throw together a caprese salad or…..

……any other kind of salad or veggie that YOU want to go along with your simple garlic shrimp.

Get the shrimp ready if you have to thaw, peel and devein them. Put a skillet on at medium heat and add a swirl of olive oil and half of the butter.

Chop up the garlic and when your pasta is cooked al dente drain all but a tiny bit of the water and put it on a small burner set to as low as it can to keep the pasta warm and stir it a couple of times while you work the quick and easy magic with your simple garlic shrimp.  

Put the shrimp in the skillet and spread them out so that they are all laying flat. Add the garlic, salt, pepper and red pepper flakes (optional).

Squeeze a little lemon juice and if your feeling a little adventurous also a dash of white wine. Give the shrimp about a minute a side.

When the shrimp is pink on the outside and opaque in the middle put in the rest of the butter and the chopped – or dried – parsley. Stir it all together and when the butter has melted…..

……..serve up and enjoy your Simple Garlic Shrimp. 

A nice white wine like a french Muscadet or an Italian Pinot Grigio pairs up real well with this Simple Garlic Shrimp.

Baked Salmon Honey Lemon Weeknight Dinner – One Pan – 20 Minutes – Quick and Easy

Honey Lemon Baked Salmon Weeknight Dinner is for busy people who still want to quickly and easily make a great weeknight dinner. This Baked Salmon recipe with the addition of the honey and lemon glaze is a real good twist on your usual baked salmon recipe.

Thaw the salmon filets if you need to. Just put them in a bowl of water to thaw while you get the veggies ready.

Turn on your oven and set it at 450°.

Line a baking sheet with aluminum foil and spray or wipe it with olive oil. Or use a nonstick baking sheet and give it the same olive oil treatment.

Cut up the potatoes and put them on the baking sheet with the broccoli and baby carrots. Drizzle everything with olive oil and sprinkle with salt and pepper.

Put the honey in a bowl, squeeze in the lemon juice and add the parsley flakes. Then whisk it all together with the brush that you are going to use to apply it to the salmon.

Lay the Salmon filets out on the sheet skin side down. If the filets have been skinned just look for the side that is flatter and has a pale gray stripe in the middle and lay that side down on the pan.

Brush them generously with the honey lemon mixture and cover with the lemon slices.

Put it in the oven for about 10 minutes or until the carrots are soft to poke with a table fork and/or the salmon wants to easily flake when you poke it with the fork.

Pan Seared Scallops – Nine Minutes Max – Quick and Easy

Pan Seared Scallops are….

…… the extreme of Quick and Easy. So much so that you should have the rest of the meal cooked and ready to serve before you put the scallops in the skillet.

I can remember as a kid back in New Jersey when we would go “down the shore” walking along the waters edge there were always lots of clam and scallop shells to pick up.

Here in Texas decent sea scallops cost $20 a pound or more. I found some in the frozen section at Costco that came in two pound bags for just 15 bucks a bag.

There is no way that a chef in a restaurant could make Pan Seared Scallops better than you will. It is that quick and easy. 

If you have to defrost them just put them in a strainer and run cold water on them for a few minutes depending on their size. Or, the way I like to do it is to put them in a bowl with enough water to cover them and squeeze in some lemon juice. 

When they have defrosted pat them dry on a paper towel and salt and pepper both sides.

Put a skillet on at medium high. Swirl a little olive oil in and add the butter. When it has heated up to the point that when you put a drop or two of water in it sizzles and evaporates immediately you are ready to go.

Forgive me but I’m going to say it again. Have all of the rest of the meal done and keeping warm on a back burner and ready to serve before you put the scallops in the skillet. The scallops will cook that fast.

Lay the scallops out in the skillet going in a clockwise direction so that you will remember the order that you put them in. They cook so fast that you will want to turn them over in the same order that you lay had laid them out. Just about 2 minutes for the first side and one for the second. Or……
