Quick Easy Chicken Thighs

You will like this for a weeknight meal when you are tired but don’t  want to just zap a leftover or a box meal and because this Quick Easy Chicken Thighs recipe is good, real good. It doesn’t have to be chicken thighs. If you keep frozen tenders or breasts in the freezer you could just thaw them out in the microwave instead.

Turn on the broiler. First put all the ingredients except the chicken in a bowl and mix them all together.  Your creative skills are going to kick in here because after the salt and pepper you can go with any kind of spices and herbs YOU want. From allspice to wasabi and everything in between. You don’t have to stick to the ingredients listed in this recipe. You probably have whatever it takes to make it real good in your pantry.

Then add the chicken the bowl and toss it all together getting the chicken coated with all the good stuff.

Spray oil the right sized cookie sheet or baking pan. You can line it with aluminum foil to make the cleanup as quick and easy as this recipe. Spread the chicken pieces out in the pan and and broil for 5-7 minutes depending on your oven and the thickness of the chicken. Turn them over and cook the other side. When the juice running out of the chicken is clear it is done.

While the chicken is cooking you can put together any kind of salad or veggie you want. We went with a Caprese salad with Avocado for Poppop.

and a mixture with healthy greens, tomato and onion with gorgonzola cheese and her favorite dressing for Gammy.

Shrimp Tossed Salad

You can make this Shrimp Tossed Salad with whatever you might have on hand. Even if you don’t have any shrimp in the freezer you could go with some chicken tenders nuked and sliced up. Or, even some bacon cooked a little on the crispy side, cooled and crumbled. As far as the veggies, well, just about any combo of what you have in the fridge. Tomatoes, Lettuce, spinach, onions and on and on. That’s what we have here in this recipe. I went with whatever I had available without making a special stop at the store. It was real quick turned out real good.

First you put the shrimp in a microwave friendly bowl and set it on defrost.

In the couple of minutes it takes for that to happen get out your veggies. Clean them and cut them up. When the shrimp have thawed peel them if you have to and put them back in the microwave for about 3-4 minutes depending their size and your microwave.  Zap them in 30 second stages checking each time for pink on the outside and opaque white in the middle. When they are done add enough ice cubes to the bowl to cover up the shrimp and mix them together.

When the shrimp are chilled pat them dry between paper towels.

This is the cast for tonights production. Tomatoes, zucchini, onions, arugula and shrimp. But you can chose the players to star in your production to suit yourself because you are the director.

Put everything a bowl big enough to toss it all together.

Add the dressing. You could just pour in the store bought dressing that you keep in the fridge or you could get a little adventurous and do it in layers of flavor. First real good extra virgin olive oil. Then balsamic vinegar, grated parmesan, salt, pepper, garlic powder and chopped fresh (or dried) parsley or basil.

Caprese Salad Plus Chicken Avocado and Zucchini

Would you like to put together sosmething for dinner tonight that is fast, easy, healthy and delicious? I’m pretty sure you are going to like this  Caprese Salad Plus Chicken Avocado and Zucchini because it is all of those things.

 You could go with some leftover rotisserie chicken or you could just cook some up.

Use either chicken tenders or sliced boneless skinless breasts. Put a pan on at medium high and add about 1 tbsp. olive oil. Lightly salt, pepper and garlic powder both sides of the chicken and cook 3-4 minutes a side until the juices run clear and/or they are firm to a poke with your finger. Remove them to a plate and when they have cooled a little cut them into flat silver dollar size pieces. 

Slice up the tomatoes, zucchini, avocado and the fresh mozzarella. You could actually use any veggies or cheese that is in your fridge, hey, it’s your salad.

Arrange the ingredients one after another in a row around your salad bowl. Drizzle some good extra virgin olive oil. Then some good balsamic vinegar, salt, pepper, some dried basil and grated parmesan cheese. Simple and healthy was never so good. Enjoy your Caprese Salad Plus.

Caprese Salad with Avocado

If you like Caprese Salad (and who doesn’t? ) You will really like this Caprese Salad with Avocado. We posted  the basic recipe for Caprese Salad a little while back and this is a way to add a some real good extra flavor to an already great salad. Slice up two Roma tomatoes. Then slice and cut up some fresh mozzarella cheese into the same number of slices as the tomatoes. I always manage to wind up with some extra pieces of mozzarella to nibble on while I halve, pit and peel an avocado. Slice up the avocado halves trying to get the same number of slices as the tomatoes and the cheese. You might have to nibble on a few of them too in order to win at the game of getting all the slices in step. Arrange them in salad bowls then top with some fresh basil leaves. Drizzle some Extra Virgin Olive Oil. Then some Balsamic vinegar. sprinkle a little salt and you might want to add a little grated Parmesan. That’s up to you. You’ll like this and so will your family and guests. “I guarantee it”
