Chicken Veggies Cheese – One Skillet- Quick and Easy

Chicken Veggies Cheese all in one skillet and on the table in less than half an hour!

This one is sort of on the order of this one skillet chicken dinner that we did a little while ago.

I had mine on some pasta tonight but if you wanted to add some slices of potatoes right at the beginning you would have the whole meal in the one skillet and it would be gluten free.

Put a skillet on at medium high and eyeball enough olive oil to cover the bottom.

Cut up the chicken tenders into four pieces each and the carrots into slices about 1/4″ wide.

Put the chicken, carrots and broccoli in the skillet and sprinkle with salt and pepper. A pinch of red pepper flakes would liven things up a little, but, that’s up to you.

Stir or toss it all together a few times as it cooks. While it all is coming together coarsely chop up the garlic cloves.

When the chicken is starting to get brown push everything out to the sides of the skillet and put the garlic in the bare spot with the butter. Squeeze the lemon juice onto the garlic and let it get hot and cook a little.

When the garlic has started to get translucent toss everything together again. Then add the feta cheese.

Toss a few more times and when the cheese just starts to melt serve it up and enjoy your quick and easy chicken veggies cheese dinner.

May I suggest a nice dry white wine like a sauvignon blanc or a chardonnay? Enjoy!!

Sliced Steak Aglio e Olio – aka Garlic and Oil

Sliced Steak aglio e olio!? Sounds crazy don’t it? Team it up with some pasta aglio e olio and you have a very quick and easy weeknight meal that is also real good. Like, fancy restaurant good. Did I mention that it’s easy?

Per Wikipedia …”Spaghetti aglio e olio  “spaghetti with garlic and oil” is a traditional Italian pasta dish coming from Naples. The dish is made by lightly sauteeing minced or pressed garlic in olive oil, sometimes with the addition of dried red chili flakes, and tossing with spaghetti. Finely chopped parsley can also be added as a garnish, along with grated parmesan or pecorino cheese, although according to some traditional recipes, cheese should not be added.”

Put a pot of water on for the pasta and add some salt. Add a little more than your gut says because the pasta really needs the salt to get tasty. Add the pasta. Our pasta du jour was linguine but any type would work. Watch it and as soon as the pasta becomes a little pliable swirl it and get it all down into the water.

I did the steak and eggplant slices on a stovetop grill but a skillet would work just as good.

We had a big New York Strip steak in the freezer but a London broil works just as nice for this weeknight supper.

Put skillet on at low heat with the good extra virgin olive oil and the garlic – slices or chopped – on at low heat. Add a little salt and some red pepper flakes (optional).

When the garlic has started to become translucent – not brown!- the pasta should be done . Using tongs lift the pasta out of it’s water and put it in the skillet with the garlic and oil (aglio e olio). Don’t worry about getting some of the pasta water in the skillet. In fact the water will blend with the olive oil and creat a nice sauce for the pasta.

An instant read meat thermometer is the most accurate way to tell if the steak is done the way that YOU want it. When the steak is ready the eggplant will be too.

NOW! Slice the steak, put the eggplant on the serving plates with the steak slices and add the pasta.

Spoon the aglio e olio over everything and dig in to your Sliced Steak Aglio e Olio.

Lemon Mint Salmon – 16 Minutes – Quick and Easy

This Lemon Mint Salmon is our spinoff from the classic Italian chicken filets with lemon and parsley.

But, it’s salmon instead of chicken and it’s mint leaves instead of parsley. Ya got that right?

Nonetheless it’s simple and very good, just like the original, but, in it’s own delicious way.

Salmon is good and good for you so we have it about once a week, for both of those reasons.

Gammy always has a mint plant in a pot out on the deck in the summer and inside on a window sill in the winter. Along with parsley, basil, rosemary, thyme, oregano, sage and on and on. Did I mention that she grew up on a farm?

If you don’t have a mint plant you can get fresh mint leaves in the produce section at your grocery store.

This is a very good, quick and easy way to go for a busy weeknight dinner. And, depending on the side dishes that you serve it with you could have gluten free or paleo.

I’m gonna leave the veggies to you tonight and just focus on the salmon.

Put a skillet on at medium high and swirl in barely enough olive oil to coat the bottom and add the butter.

Pat the salmon filet dry and season the non skin side – or if your filets have been skinned treat the flat side that has a gray stripe on it as the skin side.

First squeeze some lemon juice on the non-skin  side then season with salt, pepper and dried dill weed.

Put them in the skillet skin side up and cook until you see some white juices showing up.

Turn them over and squeeze some more lemon juice on and spread the chopped mint leaves on top. Depending on how well done that you want them and the thickness of the filets just cook them about 2-3 minutes a side. If you poke them with a fork and they want to flake they are done.

This Spicy Easy Chicken Breast Recipe is a real good one for a busy weeknight. You could include some  potato slices when you put the carrots in the skillet and have the whole meal in one pan.

I wanted some pasta tonight so that’s why you will see some fettuccine in the pics. But, you could do it with any veggie combo that you want. The jalapeño peppers are what make this chicken breast recipe stand out on it’s own. So, after the peppers it’s up to you.

Let’s get it going. Put a skillet on at medium high and swirl in enough olive oil to coat the bottom. Salt and pepper the up side of the chicken breasts. Lay the breasts in the skillet with the salt and pepper side down and jazz up the new “up” side.

Cook each side about 3-5 minutes depending on the thickness of the breasts. When the juices run clear and/or they are firm to a poke. I just check ’em with an instant read meat thermometer and when the thickest part is 165°F they are done. Remove them to a dish that will catch the drippings.

Add the chopped jalapeño peppers and whatever other veggies are tonight’s pick.  I went with some baby carrots and some thick zucchini slices. Salt and Pepper them.

You might like to add a pad of butter and squeeze in some lemon juice. B ut that’s up to you.Toss the veggies a few times as they cook. When they are done like you like them push them off the side of the pan and put in the breasts, the drippings and the chicken broth (or white wine).

Turn the breasts a couple of times as they warm back up and the liquid reduces.

Then when the breasts are warm serve up and enjoy your Easy Chicken Breast recipe. Spoon some of the liquid left in the skillet on top of the breasts and grate a little parmesan on too. You deserve it!
