Put a pot of salted water on for the pasta. You could even cook the pasta in the skillet with the sausage. When you add the sauce add the pasta. It works best that way with a short pasta like penne or rigatoni. Put a large skillet on at medium high and eyeball just enough olive oil to lightly coat the bottom of the pan. Put the sausage in. Brown them well on each side. About 3-4 minutes a side.

When the sausage is browned and firmed up move them to your cutting board and cut them in half lengthwise.

London Broil with Garlic Red Wine Sauce – It’s easy! Let’s do it!

First thing take the meat out of the fridge to get as close to room temp as possible before you put it on the stovetop grill or outdoor grill or in the skillet. Chop up the garlic. Don’t put any salt on the meat until just before you grill it. Salt will draw out water and make the cooked steak dryer. Set the grill or pan at medium high and spray or wipe it with olive oil. When it’s heated up salt and pepper the London Broil and set it on the grill.

Put a small skillet on at medium and add the butter and the chopped garlic.

As soon as the garlic starts to sizzle add the red wine, salt and pepper. Stir it all up and simmer it until the wine has reduced and gotten as thick YOU want it. If it is done before the meat is ready to serve just lower the burner to as low as it can go and scoot the pan off center a little.

Cook the London Broil 3 – 6 minutes a side depending on the thickness and how well done that you like it.

Before you slice it let it rest in a dish, that will catch the drippings, for at least 5 minutes. Before you slice the meat look at the side of the steak and notice that the grain runs on an angle. Slice on an angle opposite to the grain. This will make the slices more tender and chewable.

When you and your gang have different needs as far as how well done they like it you could cook the whole steak rare and for any of the folks that want it more well done just leave the grill or pan on at medium and put the slices that need to be more well done on the grill for a little bit.

Top off the slices with the sauce and enjoy your London Broil with Garlic Red Wine Sauce. We had some Spinach Salad with Caesar salad dressing some garlic bread and some Chianti. Life is good.

Sautéed Chicken Caprese Style

I found the original of this Sautéed Chicken Caprese Style recipe on a real good blog called Cafe Delites. We really like Caprese salad and besides the old standard we’ve made it with Avocados, Chicken and on and on. Never thought of a cooked version but this turned out great.

On a dishwasher safe cutting board cut the chicken breast(s) in half horizontally. Lay some plastic wrap over them and hammer them with the flat side of a meat mallet getting them as close to evenly thick as you can. It doesn’t have to exact.

Put a skillet on at medium high and eyeball a couple of tablespoons of EVOO. Set the oven at 350°F. Lightly sprinkle the filets with salt, pepper, red pepper flakes and dried basil.

Cook the filets for about 3-5 minutes a side depending on the thickness. When they are firm to a poke or the juices are running clear or the temperature is 165°F on a meat thermometer they are ready. While the chicken is cooking cut up the tomatoes and garlic. Rinse off the basil leaves and pat them dry. Chop up a few of the basil leaves to be used a garnish on the finished product. Also, slice some fresh mozzarella cheese  about 1/4″ thick and 3 slices per filet.

When the chicken is done remove the filets to a plate to catch the drippings. Put the garlic in the pan and mix with a wooden spoon scraping the bits off the bottom.

Add the tomatoes and basil leaves holding back 3 tomato slices per filet to go along with the mozzarella cheese topping.

Mix it all together and when the basil leaves have wilted and the tomato slices have softened spoon it all on top of the filets.

Arrange the cheese and tomato slices on the fillets. Lightly drizzle with a little bit of EVOO.

Put the pan in the oven until the cheese just starts to melt then enjoy your Sautéed Chicken Caprese Style. Drizzle the balsamic mixture over them and garnish with the chopped basil leaves. This turned out really good! There were no leftovers.

Meatballs Parmesan – You can buy ready made meatballs already cooked and frozen in the store if you  want to. Just thaw them out in the microwave per the instructions on the bag before you use them.  I like to make our own and keep them in the freezer. Here’s my mom’s recipe if you want to give it a go. You can buy Marinara Sauce in the store but if you want to make your own and keep some on hand here is our recipe for Marinara sauce. It will  last for 2-3 weeks in the fridge or 6 months to a year in the freezer.

Put 2 or 3 meatballs in individual casserole dishes or enough for everybody in a large casserole dish. Add some marinara and roll the meatballs around in it.
