Paleo Flatbread is…

….easy to make. You could make a fresh one every night while putting together your quick and easy weeknight dinners.

My wife – aka – Judy – aka -Gammy – has to be on the Paleo Diet for a while so I make her dinner Paleo style and mine, well, any damn way that I want, as long as it’s quick and easy.

I’ve been working hard at getting this Paleo Flatbread Recipe to where it pleases my honey. So here goes.

I just make one a day for Gammy while the rest of the meal is coming together. You could make bigger batches and keep them in the fridge – or freezer – with paper towels in between them and microwave them when needed.

First whisk together all the ingredients except the olive oil and let it sit for about 8-10 minutes for the almond flour to absorb the water. You could use coconut flour instead of almond flour if you prefer. Basically it’s just the Paleo friendly flour of your choice and a small pinch of salt mixed with water to make the batter.

From that point you can add a bunch of options like a pinch of baking powder to get it a little lighter and all kinds of different flavors that might work for you. Gammy likes this garlic powder, dried basil and grated parmesan cheese combo.

Ya know, I have tasted a little bit of it on occasion and it’s pretty good. BUT, I’m not abandoning Poppop’s homemade bread, ever.

Next put an 8″ – or larger – skillet on at medium and add just enough olive oil to barely coat the bottom. When the oil has heated up pour in the batter. Get the batter to spread out by tapping the center of the pile with the whisk and/or tilting the skillet to get the batter to spread out.

When the bread has cooked and firmed up enough so you can carefully insert a wide burger flipper or pancake flipper gently under the bread to separate it from the pan and gently flip it over.

Cook until it is firm almost to the point of being crispy. Remove the bread to a paper towel lined plate.

Gluten Free Flatbread from Yogurt and Almond Flour

If some of your family and friends should eat gluten free this is one of the gluten free bread recipes that I make for Gammy every night. Out of all the gluten free flatbread recipes that I make for her this is her favorite. It’s easy and so good that I even  sometimes steal a little bite.

Put a skillet on at medium high and generously spray it with oil. You first need to put about a tablespoon of plain or vanilla yogurt in a small bowl. Add about twice as much almond flour and the pinch of baking powder and mix it together.

Then add the garlic powder, grated parmesan, salt and dried basil. Sometimes if I need to get out of trouble I add some chopped up sun-dried tomatoes. Gammy likes that. Mix it up and it should come together in a ball. Add more almond flour or a little more water in very small doses if it is too soft or too dry and mix again. When you have a ball of dough put it on a surface that you have dusted with almond flour.

Flatten it out with your palm and fingers and use a spray oiled pancake flipper to carefully put it in the pan.

Give it about five minutes and slide the flipper under it and take a peek. It should be firm enough to let you carefully turn it over and give the other side the heat. When it is browned and firm remove it to a rack or a couple of rolled up towels to cool off and firm up some more.

Cheater Mini Focaccia Bread

Who doesn’t like Focaccia Bread? Nobody I know of anyway. Well, Gammy wants to stay gluten free so I have to make my own serving of bread to have with dinner each night. Some nights Bastone, some nights Carte Musica and some nights I just gotta have Focaccia. There is always some bread dough waiting  for me in the fridge. But you could use some of the dough available in the grocery store.

Take as big a wad of dough as will work for you tonight, off of the ball of bread dough that you have in the fridge. Or just get some in the store on your way home.

Shape it like an oversized hockey puck and let it rise for about 15 minutes or until it gets a little puffy.

When it’s puffy poke some  dimples in it.

Put whatever you want into the dimples then very lightly drizzle some olive oil into the dimples. This pic shows rosemary, chopped onion and red pepper flakes but you can us whatever YOU want for YOUR Cheater Mini Focaccia Bread. Here is a good wikipedia article about Focaccia Bread. Bake at 450F for about 6-10 minutes depending on how crispy (or not) that  you want it.

Bon Appetit!  It’s great with some real good extra virgin olive oil for dipping that has been jazzed up with some red pepper flakes or whatever YOU want to jazz up your olive oil with.

Zucchini Flatbread

You can make this Zucchini Flatbread gluten free by using any form of gluten free flour instead of the norm. Like rice or almond, or chickpea etc. We used King Arthurs Gluten Free Multi Purpose Flour Mix. You can make it just basic Flatbread by staying with just the flour, salt and water. You could also up the flour proportion by a half (or more) and bake them at 450F for 3-4 minutes or until they are as brown as YOU want them. There are lots of good flatbread recipes out there. I Love Italian Food, Pinch of Yum and Food all have lots of different ways to go with flatbread.

Now let’s make your Zucchini Flatbread!

Put all the ingredients except the oil in a bowl and mix it all together. Let it sit for about 10 minutes. Put a large skillet on at medium high and lightly oil. Let it heat up then place a few spoonfuls at a time into the pan. When they are light brown on the bottom flip them over and brown the other side. Stir the dough before putting it in the pan. You can make them any shape or size that you want. Serve them hot or room temp.
